The Details

We harvest in the Spring but have plenty to share all year long.  We base our pricing on $8 per pound but have a variety of sizes.  You will find many choices in our shop but feel free to ask for a specific amount.  We will custom bottle whatever you need.

Your honey has crystallized.  Why?

No, it isn’t poor quality or spoiled.  Crystallization has to with the ratio of carbohydrates to water.  Because raw honey has far more carbs than water, crystals begin to form over time.  This helps to preserve the nutrients and quality.  Many folks find that crystallized honey is easier to spread and has a richer flavor.  It also still works well for cooking and baking.

Can I reliquefy it?

Yes, you can!  Just follow these simple instructions.   Beware though:  excessive heat will destroy the natural nutrients.

  1. Fill a pot with water that comes ½ way up your jar.
  2. Bring the water to a hot (not boiling) temperature.
  3. Gently stir honey every few minutes to help break up crystals. Be careful not to splash any hot water into honey jars.
  4. Remove jars from heat when honey is once again smooth and runny.
  5. Tightly seal jars and store in a cool, dry place.

To slow down the crystallization process, store your honey in a cool, dry location (50-70F).
